Before she became America's Nutrition Leader, Zonya Foco was a 16-year-old looking to earn some cash and get out of doing the dishes. "My mom offered me $40 a week to cook for the family, and she'd do the dishes," Zonya remembers. "It was a no-brainer! I made her shake on it then and there."
Zonya soon discovered that figuring out what to cook and getting the right groceries in the house were just as challenging as getting a whole meal on the table at once. "You know how you get to the end of the recipe and it says, "serve with wild rice and French-cut green beans?'" she asks now, incredulous. "When are you supposed to make those? Why don't they tell you?"
Zonya turned to the bookshelves for help. She wanted step-by-step directions on how to put an entire meal on the table. She wanted simple, everyday meals that her family would enjoy. She wanted recipes that were fast and easy to follow. And she wanted a list of groceries to buy. Let's face it; teenagers are a lot like adults. Zonya wanted easy!
That's how the seed was planted for Zonya's cookbook Lickety-Split Meals for Health Conscious People on the Go. After six years of college,eight years as Registered Dietician and nine years of marriage, the teen-cook-turned-nutritionist was inspired by her clients to create the book she never found. The idea blossomed, and what started as a cookbook became a powerful collection of habits for healthy living.
Lasting weight loss and enduring health are achieved one step at a time. Through time-saving tips and practical advice, Lickety-Split Meals gives people the knowledge they need to make smart choices. Before you know it, a series of smart choices have become a good habit. And the only thing greater than The Power of One Good Habit is the steady accumulation of other good habits for healthy and lasting change.
Zonya is committed to the idea that small, simple steps are the key to long-term lifestyle change. Because of that philosophy, Lickety-Split Meals acts more like a countertop coach than a cookbook. The recipes are healthy, fast and easy-to-follow. Zonya shows you how to get a whole meal on the table (you guessed it) lickety-split. Recipes are organized by their prep time and feature comprehensive nutritional information for every dish. The book also includes detailed grocery lists for stocking the pantry and a section on how to "speedisize" your kitchen, saving cooks up to five hours a week.
In response to the enthusiastic suggestions of people who rely on their countertop coach, Lickety-Split Meals continues to evolve with each printing. In 2008, Zonya reworked the recipes and tips and created Lickety-Split Diabetic Meals (published by American Diabetes Association) to help those with diabetes in their quest for a healthier, happier life. All the recipes meet the American Diabetes Association guidelines for nutrition and taste, include diabetes-related tips, and the ADA’s Choose Your Foods Exchange/Choices list. Zonya’s “save time, eat smart, lose weight” recipes and tips prove that people with diabetes can eat well and enjoy what they’re eating.
